Air-gapped
An air-gapped system has no network connection to the internet or to any outside network, so data can only move in or out through physical media or a person.
Air-gapping is the strictest way to isolate a system. A truly air-gapped machine has no path to the outside world at all: no Ethernet to a router that reaches the internet, no Wi-Fi, no cellular modem. Updates and data move in by USB drive or similar, under procedures that control what comes in and goes out.
Most shops don't need a full air gap, and it has real costs: no remote access, manual updates, and no offsite backup unless someone carries a drive. A more common setup is LAN-only, where the system talks to computers and tablets inside the building but makes no outside connections in normal use.
Traveler's Shop Server is designed to run with the internet unplugged. In LAN-only mode it makes no outside connection beyond a documented license check-in. How it handles a strict air-gapped install, including updates by physical media, is not published yet. Shop Server Defense adds an encrypted USB backup drive with keys you hold, which suits shops that keep everything in the building.
